Information about olive oil and “extra virgin”

Just as we know from good wine, olive oil also has different flavors that make up its unmistakable character. On the one hand, the aroma is determined by the olive variety (in Tuscany you can mostly find the varieties Frantoio, Razzo, Leccino, Morcone, Moraiolo, Ogliarola and Seggianese). But taste also changes over time. Taste a completely fresh olive oil with its mildly spicy fruit aroma and compare it with a more mature variety with a soft, round and yet powerfully nutty taste. The color range of the oils ranges from golden yellow to the typical olive green. Here you can be completely sure that you are being offered a very special, handmade product. In addition to the taste experience, learn details about the creation of olive oil. The fruits are mostly harvested by hand or stripped from the branches with a kind of coarse comb. They are then ground into olive pulp in the oil mill and the oil is cold extracted, which gives the unique taste of a 100 percent pure, unadulterated “Olio extra vergine di oliva”. On average, 100 kg of olives produces 12 to 13 liters of oil. However, the effort involved in growing, harvesting and producing also comes at a price. If olive oil is stored properly, and as darkly as possible (preferably in the cellar at around 16° C), it can last for a year and a half or even longer.
